Good Morning Breakfast Bowl!

Ingredients:

-Eggs, Egg Whites or Tofu (Your choice!)

-1/2 cup sliced mushrooms (any kind)

-1 Tblsp. chopped onions

-Cubed Cucumber (you decide how much you want)

-Cubed Avocado (again, you decide how much)

-Cubed Tomatoes (your choice, see above)

-1 Tblsp. Chopped Parsely

-Salt, Pepper and any other spices or herbs your little heart desires

 

Directions:

Coat a non-stick pan with some Olive Oil, saute the onions and mushrooms until soft, add your protein and scramble. Add desired spices, salt & pepper (I used an Ayurvedic Blend created for me by an expert). Place in a bowl and top with Cucumbers, Avocados and Tomatoes and top with the chopped Parsley.
