Veggie Fried Rice, YUMMMM!

One of my favorite food splurges is Fried Rice. Anytime we go to a Teppan type restaurant, I covet my little bowl of fried rice and try to forget that it's probably not so good for me! Well, my love for this food, along with my Vegan-ish diet prompted me to invent a super healthy version that I can feel really good about. Hope you enjoy this as much as my family & I have!

 

 

 *Notice the nose off to the right!!!*

 

Ingredients:

-4-5 cups Cooked Jasmine or Brown Rice (must be a few days old)

-2 Tblsp. Sesame Oil

-Garlic (to taste)

-4 Green Onions (Shallots) chopped & separate the white from the green parts

-1/2 Sweet Onion

-2 tsps grated Ginger

-5-6 cups of Veggies!! So, you can be creative here. The first batch I made I used, thinly sliced brussel sprouts, julienned zucchini, Finely chopped bell peppers and julienned carrots. The second batch, I did all of the above and added some broccolini heads that I cut up small. Both were deelish. Go wild!

-Egg, Egg Whites or Tofu (again, your choice)

-6 Tblsps. Soy Sauce or Tamari

-2 Tblsps. Maple Syrup

-Sesame Seeds-to taste

-Salt & Pepper to taste

 

Directions:

 

Get a large frying pan, add the oil, garlic, the white parts of the green onions, the sweet onion and the grated ginger and sautee for about 5 min over low to med heat.

 

Add all the chopped & julienned veggies and sautee over medium heat until they are cooked.

 

Move the veggies to one side of the pan and then where there is empty pan, you can scramble up either your eggs, egg whites or tofu if you want to add this to the dish. Do as much or as little as you like.

 

Once the eggs are cooked, mix in with the veggies and then add all the cooked rice to this mixture and mix together, along with a little salt & pepper to taste.

 

In a small bowl, mix together the Soy Sauce or Tamari with the Maple Syrup and then add this mixture to the pan and stir it in well until everything is evenly coated, approx 5 minutes over med/low heat.

 

Serve portions in a bowl and top with chopped green onions and sesame seeds!!!

*If you are not vegan or vegetarian, you can top with your favorite grilled fish or meat*
