OK, so my French may leave something to be desired, but my love of French food holds strong. Therefore, I just HAD to have a Nicoise Salad the other night, so here's what I came up with....
I bag of Fingerling Potatoes (cooked & cooled-I like skins on, but you do you)
Fresh Green beans (cooked and cooled)
Cherry Tomatoes (cut in half)
Nicoise Olives (either whole or cut in half, just make sure there aren't any pits...that could be a serious bummer)
Hard Boiled Eggs (yolks removed) (cut in pieces, OR no eggs at all OR go for the whole egg!)
Just Mayo (see description below) (desired creaminess)
Dijon Mustard (to taste)
Lemon Juice (about a half, squeezed)
Salt & Pepper to taste
*note, I didn't put the amounts of any of the ingredients, because this is all about you and what you desire most, so customize away!*
For the Salad: Cut your potatoes to bite size, along with you green beans. Add in halved cherry tomatoes, Nicoise Olives, Capers and egg white pieces
For the dressing: Whisk together Just Mayo, Dijon Mustard, Lemon Juice and salt & pepper and mix into the salad and toss gently until evenly coated.

This "Mayo" is the bomb. I get mine at Whole Foods in the refrigerator section. It's completely Vegan and has very simple/natural ingredients such as: Non GMO Canola Oil, Lemon Juice, White Vinegar, and various spices.... go ahead and indulge!
