Easiest Healthy Pizzas EVER!

So, I was having a big pizza craving, but I reeeally didn't want to eat a big wad of cheesy grease (even though it can be SO good). I decided to see how inventive I could be, so here it goes. Oh btw, the beauty of this recipe is I bought everything at Trader Joe's...so convenient!




1 package Frozen Naan Bread (plain, not garlic..unless you LOVE garlic, then go for that one)

1 Organic Zucchini

1 bag Pine Nuts

1 Sweet Onion

1 bag Organic Arugula

Parmesan Cheese

Oilve Oil

Salt & Pepper to taste




Preheat oven to 375 degrees OR plan on grilling you pizzas...you decide


Thaw out the Naan Bread first, then spray the bottom of a cooking sheet with non-stick spray and place Naan breads on top so the bottoms get coated.


Cut Onion into strips and cook with olive oil in a pan until brown and carmelized


Slice zucchini into thin rounds and cook single layer in a little bit of oilve oil until browned on both sides


Brush some olive oil over the top of your Naan bread first, then cover with your oinions. Next, arrange zucchinis on top, add a sprinkle of Pine Nuts and Parmesan (note: Vegan cheese can be substituted here if so desired) & add Salt & Pepper to taste.




Either Bake in Oven for about 10-15 min to desired crispiness or place directly on the grill of your BBQ for approx 5 min


Just before serving add a handful of Arugula on top, toss up a side salad and pour yourself a glass of vino aaaand....BON APPETITO!
