Vegan Zucchini Patties

 Voila!! The finished product...of course there was wine and I sliced up some deeeelish Heirloom Tomatos with just a touch of olive oil & balsamic, salt & pepper and fresh basil leaves as a side dish.

*note-I splurged and bought a veggie spiraler at Williams-Sonoma, so that's how I sliced up my veggies...I say you can do your own thing. You can use a large cheese grater or go the old school route and slice to your liking with a knife...the key to these patties is the veggies should be thin so they cook a little faster*


Ingredients for Patties:


2 zucchinis-sliced thin

1 parsnip-shredded

1carrot-sliced thin or shredded

1 baked sweet potato (make sure it's nice & soft...and peel it)

1 leek finely chopped

1 Tblsp grated ginger root

1 Tblsp sesame seeds

1 tsp garlic salt

1 tsp black pepper

1 tsp tumeric

1 tsp paprika

1/2 tsp cayenne pepper (adjust this to your spicy liking level)

1 tsp lemon juice

1 tsp mustard (can be sweet or spicy...your choice)

4 Tblsp Olive Oil or Sesame Oil for frying patties


Ingredients for Salad:


Create a mixture of some Baby Spinach, Mixed Baby Greens & Sliced Fennel, or....ignore my suggestion and create your own salad ingredients!


Ingredients for the Dressing/Sauce:


1/2 cup olive oil

2 tsp white balsamic vinegar

1 tsp lemon or lime juice

1 tsp honey

1 tsp mustard of your choice

1/2 tsp tumeric

1/2 tsp paprika

2 tsp chopped parsley

1/2 tsp thyme

salt & pepper to taste

Shake well





Add all the ingredients for the patties together in a bowl. Make sure your baked sweet potato isn't scorching hot. Wash your hands, because you're gonna have to dig in! Mix everything together really well and form your patties...I usually get around 5 small patties out of each batch. Heat oil in the pan and place patties gently in....cook on a med-med high heat for about 8 min on each side. What you are looking for is a nice crispy browning, so cooking time may vary



While the patties are cooking, toss the salad with about 1/2 of the dressing and put on plates, then top with the cooked patties (it's OK if they are still hot) and drizzle the remaining dressing over the patties...ENJOY!
